Remove all innards (body and neck area), rinse and dry inside and out. Lift skin and insert garlic cloves as many places as possible. Put celery, garlic cloves and rosemary sprigs and a half cube of butter inside the cavity. Drizzle olive oil on outside and rub in all over the body, legs.
Roast uncovered at 325 for 22 minutes a pound, or until legs wiggle (not by themselves….you have to wiggle them :)).
At 1-2 hours (or when breast and legs start to brown), cover with foil.
Let rest for 30 minutes.
